October Favorite Things: Favorite Meals - Greek Chicken and Quinoa

We have several meals that we really enjoy as a family!  Tonight we had one of those meals...Greek Stuffed Chicken with Greek Quinoa and fresh hummus (made right before dinner!)! YUM!  The only thing missing was some fresh pita, naan, or laffa!  Just as a side note, the picture below was taken in the spring when we had roasted romanesco along with dinner.  I was going to take a new, better picture tonight, but by the time I remembered, everything had been devoured. Oops.

Seriously, with their help, I have conquered hummus.  Until I discovered this recipe, I just couldn't make it turn out right.  Now I'm dreaming of Roasted Pine Nut Hummus and other varieties! 

As for the Greek Quinoa recipe, it comes from the amazing folks over at Two Peas and Their Pod.  This Greek Quinoa Salad is one of my all time favorites!!!

October Favorite Things: Sunday Night Breakfast for Dinner!!

I love to cook for my family and I really enjoy trying new recipes.  By end of the week, though, I am tired of planning, preparing, and cooking meals.  Saturday is usually a free for all ( hopefully including leftover pizza from Friday night pizza night).  Sunday lunch is generally some sort of basic meat, thrown on the grill, with a side or two.  Again, think easy and fast.

And then comes Sunday night!  Again, after a week of trying to have well-balanced, healthy, tasty meals, I am DONE!  Hence, Sunday night breakfast for dinner was started! We have had this tradition for quite a few years now.  Of course, it doesn't happen EVERY Sunday night, but for the most part it's just what we do.  And it takes SOOOO much pressure off of me.  We rotate between pancakes, waffles, biscuits, oven baked oatmeal, breakfast sandwiches, etc., with an occasional more "complicated" breakfast thrown in (think homemade cinnamon rolls or biscuits with gravy).  This is accompanied usually by some sort of breakfast meat, eggs, and fruit.  Voila!  Dinner is served.  Mom is happy and so is everyone else!
